Indeed, we should probably have this listed as an errata for the current 5100.13. If you are so inclined, you can create a new issue on this web page:

Generally speaking most configurable/settable attributes implicitly support the 'no-value' out-of-band value, but we don't always remember to list it in the attribute syntax.
And for those following along at home, a 'no-value' for this attribute disables DNS-SD registrations for the Printer.
